Mmm, Paella

Raquel’s family came by on Saturday night, and her mom brought along everything needed for Paella. I was checking cookbooks, trying to figure out what exact ingredients and quantities but it seems making Paella isn’t a quantitative endeavour.

No measuring cups were soiled in the process. The grill was heated til it was hot enough, as measured by waving a hand over the flame.

Perhaps the only measurement applied was the timing. After a glass of wine was empty, the sauteed onions and simmered tomatoes were done, and ready for scallops, sea bass to be added. Two glasses later, time to add shrimp, and then let sit for one more glass slowly enjoyed before serving. Spending my weekdays benchmarking everything, it’s refreshing just to let it ride on pure feeling and intuition. And, a bit of wine.
